Chick Un Salad


1 cup Almonds, soaked
2 cups Cashews
1 cup Celery
1/3 Purple Onion
½ cup Red Pepper
2  level Tbs. Celtic Salt
6 oz. Lemon Juice
1-2 oz Agave Syrup
3 or more sprigs of Rosemary
1 tsp. Marjoram & ½ tsp. Thyme
6 oz. or less filtered water
½ cup olive oil, optional
                                                                                               
In a food processor add ingredients.  Add a small portion of the water at a time and blend until mixture achieves desired consistency.  Check for taste and adjust.  Transfer mixture to a large bowl

Step #2
1-1/2 cups Celery, chopped
In a food processor, pulse celery for 4-5 minutes
Add celery to textured mixture
Add following to large bowl
¼ cup Parsley
½ cup Scallion, chopped
½ cup Red Pepper

Mix thoroughly and serve over a bed of greens, or store in airtight container in the refrigerator
Will last for 7-10 days
