LIVE CASHEW HUMMUS

2-1/2 c. cashews (soaked at least 2 hours)

1/2 c. freshly squeezed lemon juice

3/4 c. raw tahini

1/4 c. olive oil

1 medium clove garlic

3/4 tsp. salt

1 tsp. ground cumin

pinch cayenne

1/2 c. water

Rinse and drain cashews well and add to the bowl of a food processor.

Add rest of ingredients and blend on high speed for 30-60 seconds. Add more water if necessary for easier blending. The consistency should be thick and smooth
