SPINACH APPLE SOUP

4 c. spinach leaves, tightly packed

1 apple, peeled and choped

1 c. water

2 tsp. fresh lemon juice

dash salt

1 ripe avocado, chopped

 

Place the spinace, apple, water, lemon juice and salt in a blender and process until smooth. Add the avocado and process until smooth. Serve immediately.

For a chilled soup, refrigerate for 2 hours before serving.
